Healthy Kid-Approved Granola
Ingredients for Healthy Kid-Approved Granola:
Rolled Oats - 4 cups
Sliced almonds - 1 cup
Ground cinnamon - 2 tsp.
Salt - 3/4 tsp.
Neutral oil - 1/2 cup
Honey - 1/3 cup
Vanilla Extract - 2 tsp.
Coconut flakes - 2/3 cup
Chocolate chips - 1/2 cup
Dried cranberries - 1/2 cup
Chia seeds - 1/4 cup
Method of preparing the Healthy Kid-Approved Granola:
  1. Preheat the oven to 350°F (180°C). Prep a large cookie sheet by lining it with baking paper.
  2. In a large bowl, combine the oats, almonds (or any other nuts you're using), cinnamon, and salt. Stir well.
  3. In a separate smaller bowl, mix together the oil, honey, and vanilla extract. Drizzle this mixture over the oat and nut mixture, and then mix everything well until the nuts and oats are fully coated in the oil mixture.
  4. Transfer the granola mixture to the cookie sheet and spread it out evenly.
  5. Bake the granola for 25-30 minutes, mixing well at the 10-15 minute mark and turning the cookie sheet to ensure even cooking. When ready, your granola should be nice and golden.
  6. Remove the granola from the oven and let it cool off for 15 minutes. It should be barely warm. Then mix in the chia seeds, coconut flakes, dried cranberries, and chocolate chips (if using).
  7. Transfer the granola to a jar or any other sealable container. Store at room temperature for up to 1 month.
Chef's Tip:
Avoid adding dried fruit or chocolate chips before cooking the granola. The dried fruit will burn and the chocolate chips will melt in the oven. You should only add these ingredients when your granola is ready and cooled.
