Preheat the oven to 375°F (190°C). Spray the baking sheet with cooking spray.

In a shallow container, stir together the cracker crumbs, cornflake crumbs, garlic powder, and cayenne pepper. Set aside.

Pat-dry the chicken with paper towels.

Mix the egg whites, mustard, yogurt, and salt in a bowl. Toss chicken the pieces in the yogurt mixture, coating the chicken thoroughly in the marinade.

Now dip each chicken piece in the cracker and cornflake mixture. Place the chicken pieces on the baking sheet so that they don't overlap and spray with more cooking spray.
