Method of preparing the chicken:

In a food processor, pulse the first 9 ingredients into a smooth paste.

Oil a deep pan over medium heat and pour in the mixture. Fry and stir constantly for 4-5 minutes.

Add the lemongrass stalk and the chicken and fry for 15 minutes.

Add the coconut milk and 1/2 cup water and lower the flame to a simmer. Cook without a cover for 30 minutes or until chicken is tender.

Garnish and serve. You can serve with some sliced cucumbers and rice.
