Preheat the oven to 425°F and line some baking sheets with parchment paper.

Cut the chicken breast in half lengthwise, then cut into thin slices.

Combine the eggs, milk, salt, and pepper in a large mixing bowl and whisk together until combined. Add the chicken and mix.

Place crushed corn flakes in a large shallow bowl and dredge the chicken in it to coat them. Place each of them on a lined baking sheet.

Place the chicken in the oven and cook at 425°F, for about 14-18 minutes, or until cooked through. Place a wooden skewer into each chicken piece.

In the meantime, preheat the waffle iron and spray with some nonstick spray. Whisk the waffle batter ingredients in a large mixing bowl.

When the chicken pieces are ready, grab each one separately, dip it into the waffle batter, and place it on the waffle iron (with the skewer sticking out).

You may serve with some dipping sauce. Suggestion: mix mayonnaise, maple syrup, and mustard for one delicious dip.
