A classic chicken seasoning for those mid-week days. The red wine vinegar gives it a small tinge of pungent taste. This will go well with white wine, a hearty risotto and your favorite choice of company.
Method of preparing the chicken:

Preheat the oven to 450°F (230°C). If the chicken is whole, make sure it is fully thawed and quarter it. Pat dry with towels and place on a lined baking dish.

Rub the chicken with 1 tablespoon oil. Season the chicken with salt and pepper. Roast for 30 minutes.

In a food processor blend the sauce. Add the basil, garlic, red pepper flakes, ¼ cup olive oil and red wine vinegar.
Pour the sauce over the chicken and let it rest for 10 minutes before serving.
