Chicken Kyiv is a stuffed chicken cutlet filled with butter and herbs, then coated in bread crumbs and either fried or baked. Method of preparing the Chicken Kyiv:

In a medium bowl, combine the butter, garlic, parsley, and 1/4 tsp salt and mix until combined.

Transfer the butter mixture to a sheet of parchment paper and shape it into a 4 x 2.5-inch rectangle, as shown in the video. Chill until butter becomes firm, and then cut lengthwise into 2 blocks.

Place the chicken breast between 2 freezer bags or 2 pieces of parchment. With a meat tenderizer, beat the chicken to a 0.2-inch thickness all over.

Season the chicken with 1/2 tsp salt and pepper on both sides.

Place a block of the parsley butter in the middle of each chicken breast. Fold the sides of the chicken in to cover the butter and then roll up the chicken, seam down, as shown in the video.

Wrap the chicken tightly rolls in plastic wrap. Freeze for 30 minutes. This seals the butter inside as you fry or bake the chicken.

Put the flour, egg, and breadcrumbs in 3 different bowls. Coat the chicken rolls in the flour first, then in the egg, and finally in the breadcrumbs.

Freeze the chicken rolls for another half an hour.

Preheat the oven to 350°F/ 180°C. Put an oven rack over a baking tray.

Place chicken rolls on the rack and bake in the oven for 20 minutes (the temperature of the chicken should be 150°F/ 65°C).

Remove from the oven and let the chicken rest a few minutes before serving with a side dish of your choice. You can garnish with parsley.
Chef's Tip:
You can also deep-fry the chicken for 2-3 minutes before putting it in the oven. This is an extra step, but it is the more authentic way to make Chicken Kyiv. If you decide to pre-fry the chicken, reduce the oven cooking time to 15 minutes.
