Chouquettes are sugar puffs made from a ‘pate a choux’, a dough made with eggs, flour, butter and water over a stovetop. Because this dough is a little tricky, and going even a little off the recipe can lead to a disaster – follow the recipe and instructions to the T, and you’ll end up with the tastiest chouquettes you could dream of.

Method of preparing the Chouquettes:

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a medium-sized pot, boil the water with sugar, butter, and salt. When everything melts, remove from heat and add the flour. Stir until a dough forms.

Transfer the dough to a mixer and turn on to medium speed with the whisk or paddle attachment and let it run for a few minutes to allow air into the dough.

Add the eggs in one at a time, making sure that each egg is fully incorporated before adding another.

Transfer into a piping bag and pipe onto the parchment in a circular motion. The circles should be 1-inch wide and 1-2 inches tall. Leave a distance of about 2-3 inches between each chouquette because they will rise and spread out in the oven.

Sprinkle chocolate chips or granulated sugar and bake for 10-15 minutes until they turn golden. Don't open the oven during baking.
Method of preparing the syrup:

Place all the ingredients into a small pot over a medium-high heat. Cook until it reaches a boil.

Cook for 4-5 minutes after it has reached a boil and then take off of the heat.

Brush on the chouquettes and serve.
