Admittedly, this is a classic fall season recipe. It just screams October. But something about those chocolate chips just makes us want to bake these cookies all year round, don't you agree? Try making this recipe with salted butter once and you'll be surprised at how it enhances the flavors.
Method of preparing the cookies:

Preheat the oven to 350°F (180°C). Beat together the butter, egg, brown sugar, sugar and vanilla. Add the pumpkin puree.

In a separate bowl, combine the flour, salt, baking powder, baking soda and pumpkin spice.

Combine the dry ingredients into wet ingredients and mix well. Finally, add the chocolate chips and stir until evenly distributed.

Line a baking dish with parchment paper. Form 1½" balls from the dough and flatten to about ¾" thick discs. Arrange evenly spaced on the baking dish.

Bake for 8-10 minutes. If desired, while the cookies are still hot you can press more chocolate chips on the top.

Allow 10 minutes cooling before removing from the baking dish.
