Black Night Cookies

Wolves are howling in the distance, and you're at home making cookies as dark as the night itself, with no food coloring needed. The recipe will yield you dark cookies year-round. How you choose to decorate them will set the spooky meter. We suggest making them into black cats. 

Make ahead: the mixture can be chilled for 2 days before baking.

Black Night Cookies
Ingredients for cookies:
All-Purpose flour - 1 1/2 cups
Black cocoa powder - 1/4 cup
Baking soda - 1/2 tsp.
Kosher salt - 1/4 tsp.
Granulated sugar - 3/4 cup
Unsalted butter - 1 stick (softened)
Light brown sugar - 1/2 cup (packed)
Egg - 1, large
Vanilla Extract - 1 tsp.
Method of preparing the cookies:
  1. Preheat oven to 350°F. In a medium bowl, whisk flour, cocoa powder, baking soda, and salt.
  2. With the help of an electric mixer, beat the granulated sugar, butter, and brown sugar until creamy. Add the egg and vanilla.
  3. Now add the dry ingredients and beat to combine. Cover and chill in the fridge at least 30 minutes and up to 2 days.
  4. With your hands, scoop small portions of the mixture, roll them into a ball and flatten them on a lined baking sheet.
  5. If you want to decorate the cookies, now is the time. Otherwise, bake the cookies until edges are set, 8 to 10 minutes. Let cool 5 minutes, then transfer to a wire rack and let cool completely.
Chef's Tip:
Optional Halloween decorations: use almond slices, sugar drops, molten chocolate, or M&Ms to turn the dark cookies into black cat cookies.
