All bread lovers will agree that a perfect baguette, still warm from the oven with a thin crackling crust and a soft interior, is ideal for everything from a dollop of butter to the best bruschetta. This is how you can make some delicious French baguettes at home.
Mix all ingredients in a bowl, cover with a plastic wrap and let rest for 15 minutes.
Fold and stretch the dough, and flip it. Cover and let rest 90 minutes, folding, stretching and flipping every 30 minutes. Cover in plastic wrap again and let sit overnight in the fridge.
On a lightly floured surface, divide the dough into 3 equal parts. Knead into rectangles and let rest 45-60 minutes.
Preheat oven to 500°F (260°C). Place a pan of water on the bottom rack.
Roll the dough into cylinders, stretch to desired length and seal the seams. Let rest and rise 30-60 minutes. Place on the baking sheet, make 3 scores on each baguette.
Reduce temperature to 475°F (240°C) and bake for 15 minutes. Flip, remove the water pan, reduce temperature to 450°F (230°C), and bake again for another 15 minutes or until deep golden brown.
