Melt the butter and set aside. Process the rest of the ingredients and process in a blender until smooth.

Slowly drizzle in the butter until uniform.

Toast the English muffins. Once they cool down, butter them.

Cook the bacon until browned, about 2-3 minutes on each side. Top each muffin with a piece of bacon or ham.

Now we poach the eggs. Boil water with a drop of vinegar and reduce to a simmer. Stir the water to create a whirl.

Crack the egg into a bowl, and while the water still whirls lower it gently into the water. Let cook for 3 minutes and remove from the water with a slotted spoon, onto a paper towel to absorb excess water.

Put the eggs on the bacon-topped English muffin, then cover with the sauce and garnish with greens.
