5 Secret Tips to Prepare the Best Scrambled Eggs

Eggs make a nutritious, versatile ingredient. One of my favorite ways to eat them is scrambled. While it may seem like an easy recipe to make and you're probably thinking that you do not need a set of tips to follow for scrambled eggs, getting the right consistency and color is not as simple as it may seem. The tips (plus a bonus video) below will show you how to achieve uniformly golden, soft, and custardy scrambled eggs.

TIP #1: Choose the freshest eggs you can find

When cooking something as simple as scrambled eggs, your final product will be as good as the ingredients you've started off with. So use the freshest eggs you can find. The yolk should be of an orange, golden color.

 

TIP #2: Whip it well

A good blender combines the whites and yolks well enough for a streak-free scramble and whips up a good amount of air, creating light and tender egg mixture. At this stage, you can also season the eggs with a little bit of salt.

 

TIP # 3: Adjust the heat

When preparing scrambled eggs, adjust your stove at the right temperature. For the perfect consistency, opt for a medium to low heat. If you can't find the right temperature, aim for low as opposed to too high. High heat will make your eggs dry, while a lower heat will make for a soft, custardy scramble. Make sure you cook your eggs on a non-stick skillet.

 

TIP # 4: Do not shy away from fat

Butter has just the right consistency for scrambled eggs. Oil can be used too, however, the moisture found in butter helps keeps the eggs luscious.

 

TIP #5: Sweep, don't scramble

To create soft, white folds, use a heat-safe spatula and the right size skillet (4 eggs for a non-stick 10-inch skillet). Heat the skillet over medium to low heat and add the butter. Once it has melted, add the well-beaten eggs, letting them sit for a second. Use the spatula to push the eggs from one side of the skillet to the other. Proceed with a 'push' motion 3 or 4 times. Then sweep the spatula all the way around the skillet, creating long egg waves. Continue to do this, tilting the skillet if necessary, spreading any uncooked eggs over the surface. The eggs should appear set but slightly undercooked.
