3 Delicious Desserts with Cinnamon

Fried Cinnamon Apple Rings 

This delicious recipe combines the best fall ingredients - apples and cinnamon coated in a crispy batter. This recipe will surely become a new treat your family will happily enjoy:

Ingredients (serves 6)
• 3/4 large apples
• 1 cup all-purpose flour
• ¼ teaspoon baking powder
• 2 tablespoons sugar
• ¼ teaspoon salt
• ¼ teaspoon cinnamon
• 1 large egg, beaten
• 1 cup buttermilk
• Vegetable oil, for frying

Cinnamon Sugar Topping
• ⅓ cup sugar
• 2 teaspoons cinnamon

Directions:
1. Add the flour, baking powder, sugar, salt and 1/4 teaspoon cinnamon to a medium-sized bowl and set aside.
2. Meanwhile in a small bowl combine the egg and buttermilk and mix well. 
3. In a third dish mix the remaining 1/3 cup sugar and 2 teaspoons of cinnamon, reserving some for topping. 
4. Meanwhile, slice the apples into 1/4 inch slices and use a biscuit cutter to remove the cores along with the seeds leaving 1/4 inch-wide rings. Pat the apple rings dry with a paper towel to remove the excess moisture. 
5. Then, over a medium-high heat, heat the vegetable oil in a frying pan to 350°F. As the oil heats, combine the flour mixture and the buttermilk together into the batter. Mix well to remove any lumps. 
6. Dip the apple rings one at a time into the batter and tap the apple rings against the side of the bowl, removing any excess batter. Place the rings into the hot oil and fry in small batches, turning them round until they have browned on both sides. 
7. Once crispy and golden, transfer to a paper towel-lined plate, removing excess oil. 
8. Then dip each apple ring into the cinnamon sugar and coat evenly. Let cool on a wire cooling rack and serve warm. 

 

Baked Cinnamon Roll Oatmeal

A breakfast idea that you'll want to wake up to again and again. 

Ingredients
• 2 cups milk
• 2 cups old-fashioned oats
• 1 large egg
• 4 tablespoons brown sugar
• 2 tablespoons unsalted butter, melted
• 1 1/2 teaspoons cinnamon
• 1 teaspoon vanilla extract
• 1/2 teaspoon salt
• 1/2 teaspoon baking powder
• 1/3 cup brown sugar
• 4 tablespoons unsalted butter, melted
• 1 tablespoon cinnamon
• 1/2 cup powdered sugar
• 1/2 (8 oz.) package cream cheese, softened
• 2-3 tablespoons milk

Directions: 
1. Preheat the oven to 375°F and lightly grease a 9x13-inch baking dish with butter or non-stick spray.
2. Mix the oats, sugar, cinnamon, salt and baking powder in a medium bowl. Then, in a separate bowl beat the egg into the milk and pour in the vanilla extract. Continue to whisk and gradually pour in the melted butter.
3. Then, stir in the dried oat mixture into the wet ingredients and combine. Transfer the mixture into a baking dish and place in the oven, baking for 20 minutes, or until the oatmeal is set and browned on top. 
4. While the oatmeal is baking, combine 1/3 cup brown sugar, 4 tablespoons melted butter and 1 tablespoon cinnamon. Combine all ingredients in a medium bowl and whisk together until smooth. 
5. In a separate bowl whisk together the cream cheese with powdered sugar and slowly add 2 tablespoons milk until the icing is smooth. Add the remaining milk for a thinner icing consistency. 
6. Serve warm and enjoy!

Cinnamon Swirl Coffee Cake

This cake of buttery goodness will surely not disappoint!​

Cinnamon Sugar Topping
• 1/4 cup (55 grams) firmly packed light brown sugar
• 1 1/2 teaspoon (2 grams) ground cinnamon

Coffee Cake
• 2 cups (260 grams) all purpose flour
• 1 teaspoon (4 grams) baking powder
• 1/2 teaspoon (2 grams) baking soda
• 1/2 teaspoon (2 grams) salt
• 1/2 cup (113 grams) unsalted butter, at room temperature
• 1 cup (200 grams) granulated white sugar
• 2 large eggs, at room temperature
• 1 teaspoon (4 grams) pure vanilla extract
• 1 cup (240 ml) buttermilk, at room temperature
Note: For a substitute to commercial buttermilk, stir 1 tablespoon lemon juice into 1 cup (240 ml) milk. Let stand at room temperature for 10 minutes before using.

Directions:
Cinnamon Swirl Coffee Cake: Preheat oven to 350 degrees F (180 degrees C). Butter a 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf pan. Line the pan with parchment paper.
Cinnamon Sugar Topping: In a small bowl, stir the ground cinnamon with brown sugar.
Coffee Cake: In a bowl, whisk the flour, baking powder, baking soda, and salt. 

1. In your electric mixer’s bowl, beat the butter until soft (1 minute). 
2. Add the sugar, while beating, on medium high speed, until light and fluffy (3-4 minutes). 
3. Add the eggs, one by one, beating well after each. Scrape the sides and bottom of the bowl. 
4. Beat the vanilla extract in. 
5. On low speed, add the flour mixture (in 3 additions) alternately with the buttermilk (in 2 additions), beginning and finishing with the flour. Mix until they’re combined.
6. Spoon half (450 grams) of the batter into a prepared pan, and smooth the top with a spatula or the back of a spoon. 
7. Then sprinkle half (30 grams) of the cinnamon sugar topping onto the batter. Cover with the remaining batter and then sprinkle with the left over cinnamon sugar topping. With a knife, swirl the batter. 
8. Bake for 55 minutes, until a toothpick placed into the middle comes out clean. 
9. Take out from the oven and cool on a wire rack for 10 minutes before removing from the pan.
10. Serve warm or at room temperature. Can store at room temperature for three days or freeze for one month.
