Steak Salad With Eggplant, Peppers, and Onion

Ingredients for Steak Salad With Eggplant, Peppers, and Onion:
Balsamic vinegar - 2 tbsp.
Rosemary - 1 tbsp. (chopped )
Garlic - 1 clove (minced)
Salt and Pepper - to taste
Skirt steak - 8 oz.
Eggplant - 2 medium (cut into 1/4-inch-thick slices)
Red bell pepper - 2 (quartered and seeded)
Red onion - 1 medium (cut into 1/4-inch-thick slices)
Ricotta cheese - 1/2 cup
Parmesan cheese - 2 tbsp. (finely grated)
Basil - 2 tbsp. (chopped )
Olive oil - 3 tbsp.
Tuna and White Bean Salad

This terrific winter salad is especially filling and healthy, using white bean and tuna to give you those important Omega-3 oils as well as a plethora of great nutrients, while also keeping you filling like you've had a satisfying meal.

Ingredients:
Garlic - 1 head
Parmesan cheese - 2 tbsp. (finely grated)
Lemon juice - 1 1/2 tbsp. (fresh)
Anchovy - 4 (packed in oil, patted dry)
Cannellini beans - 1 can (rinsed and drained)
Romaine lettuce - 5 cups (chopped)
Sun-dried tomatoes - 5 halves (chopped)
Parsley - 2 tbsp. (fresh and chopped flat leaf parsley)
Olive oil - 1/4 cup
Salt and Pepper - as needed
Canned tuna - 1 can
Huevos Rancheros Salad

A version of a classic Mexican breakfast favorite, this dish is transformed into a filling and delicious winter salad with a nice kick of a sweet and tangy lime vinaigrette. With only 20 minutes to prepare, this dish is as surprising as it is easy to make.

Ingredients:
Black beans - 1 can (no-salt-added beans, rinsed and drained)
Cilantro - 3 tbsp. (coarsely chopped)
Lime juice - 2 1/2 tbsp.
Chipotle in adobo - 1 tbsp. (canned and chopped)
Cumin - 1/2 tsp.
Garlic - 1 small clove (minced)
Salt - a pinch
Avocado - 1 (pitted, halved and sliced)
Eggs - 4 large
Salsa - 1/2 cup (or salsa verde)
Olive oil - 1 tbsp.
Arugula leaves - 1 cup
Corn - kernels for topping
Roasted Cauliflower-Quinoa Salad

This great winter salad can be completely vegetarian or can have some shredded rotisserie chicken in it.  The second option leads to a perfect blend of savory and sweet, heat and cool. Perfect for any winter's day. The vegetarian option is ever lighter but just as delicious.

Ingredients:
Cauliflower - 1 head (cut into 1-inch florets)
Seedless red grapes - 2 1/2 cups
Quinoa - 1/2 cup
Greek Yogurt - 1/2 cup (plain (full fat))
Curry powder - 1/2 tsp.
Cumin - 1/4 tsp.
Lime juice - 2 tsp. (fresh)
Cilantro - 1/4 cup (chopped)
Cashews - 1/4 cup (unsalted, roasted)
Rotisserie Chicken - 2 cups (shredded, optional)
Olive oil - as needed
Salt and Pepper - as needed
Roasted Fennel and Beet Salad


We're all used to the regular soups, stews and hot pastries that we eat during the winter. But don't you miss a good winter salad? I need that fresh feeling once in a while. One of the stars in this salad is radicchio. While it looks very similar to the red cabbage, radicchio has a much bitter taste.

Fennel - 2 whole bulbs (tops removed)
Salt and Pepper - to taste
Orange - 2 medium
Greek Yogurt - 1/2 cup (plain, full fat)
Tahini - 2 tbsp. (divided)
Lemon juice - 1 tbsp. (fresh)
Cumin - 1/4 tsp.
Garlic - 1 small clove (minced)
Radicchio - 1 cup (sliced)
Beets - 4 small (cooked and cut into wedges)
Walnuts - 1/4 cup (toasted)
Olive oil - 1 tbsp.
Root Vegetable Salad

Ingredients:
Brussels sprouts - 9 cups (trimmed and thinly sliced)
Sweet potato - 2 medium (peeled and cut into 1/2-inch cubes)
Onion - 1 medium (sliced)
Dijon mustard - 2 tsp.
Honey - 1 tsp. (alternative: maple)
Olive oil - 1/4 cup (plus smore more for baking sheets)
Salt and Pepper - as needed
